Served with a cool honey lime sauce made with chili powder and cumin. When it comes to Mexican food, I love how simple it is and how many fresh vegetables and spices there are that can make a simple recipe taste amazing.

Ingredients

  • 1large headRomaine Lettucerinsed, chopped, and dried
  • 1cupcherry tomatoeshalved
  • 1avocadodiced
  • 1English cucumbersliced
  • 1small red onionthinly sliced
  • 115.25 oz canred beansdrained and rinsed
  • 115.25 oz cansweet corndrained
  • 1red bell pepperchopped
  • 1/2cupblack olivescut in half
  • 1/3cupfresh cilantrochopped
  • 1cupcrumbled cotija cheeseor feta cheese

Lime dressing ingredients:

  • 1/3cupextra virgin olive oil
  • 1/4cupred wine vinegar
  • 1tablespoonhoney
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/4teaspooncumin
  • 1/4teaspoonchili powder
  • 1/2teaspoonsea salt
  • 1/8teaspoonblack pepper freshly ground

Instructions

Make the dressing:

  • To begin, put all of the dressing ingredients into a small bowl and mix them together. After that, add the oil in a slow and steady stream while swirling to blend everything. Put aside for later.

Assemble the salad:

  • All of the salad components, with the exception of the cheese, should be chopped and mixed together in a separate bowl.
  • Afterward, pour in the dressing and mix everything together. Put the dish in the refrigerator for one hour before serving so that the flavors can combine.
  • The dish should be served with cotija cheese sprinkled on top.
