Healthy Buffalo Chicken Dip – Delicious Recipe Ever

  • 2 cups shredded cooked chicken, I used rotisserie
  • 1 – 2 tbsp unsalted butter or olive oil
  • 1 small yellow onion, finley chopped
  • 2 – 3 large garlic cloves, minced
  • ½ cup buffalo sauce or Frank’s Red Hot Sauce
  • 1 ¼ cup plain Greek yogurt
  • ⅓ cup reduced-fat or Neufchatel cream cheese
  • 2 tbsp lemon juice, fresh
  • 1 tbsp dijon mustard
  • 3 – 4 tbsp nutritional yeast
  • ¾ tsp dried dill
  • ½ tsp onion powder
  • ½ tsp paprika
  • 1 cup shredded sharp cheddar cheese or mozzarella cheese, (reserve ⅓ cup for sprinkling on top)
  • Garnishes: 1 large green onion thinly sliced and/or sprinkle of feta or blue cheese

Prepare an 8×8-inch baking dish by greasing it and preheating the oven to 400 degrees Fahrenheit. Any round or square dish of comparable dimensions can be utilised; however, if the dish is larger than 8×8 inches, the cooking time should be reduced by three to five minutes.

In a large sauté pan, bring the butter or olive oil to a temperature of medium heat. Sauté the onions for three to five minutes, or until they become translucent. Add the garlic that has been minced, stir it, and wait thirty seconds until the aroma is released.

In the meantime, combine the following ingredients in a mixing bowl: buffalo sauce, Greek yoghurt, cream cheese, lemon juice, dijon mustard, nutritional yeast, dill, onion powder, and paprika. Following the completion of the onions and garlic, the heat should be reduced to medium-low, and the buffalo-yogurt sauce should be poured on top.

Whisk the mixture continuously until the cream cheese has completely dissolved and the sauce has reached a warm and somewhat bubbling state. After that, take the pan off the heat and add the cooked shredded chicken along with two-thirds of a cup of sharp cheddar cheese. Stir until the cheese is melted.

Transfer carefully to the baking pan that has been greased, and then sprinkle with an additional one-third cup of cheddar cheese.

Cook in the oven for ten to fifteen minutes, or until the cheese is bubbling and melted. Set the oven to broil for a further one to three minutes, then remove the dip from the oven immediately. This will give the top a golden brown colour.

It is recommended that you wait five minutes before garnishing the dish with sliced green onion, feta cheese, or an additional drizzle of ranch dressing. Prepare and serve hot, accompanied by your preferred vegetable sticks and tortilla chips. Have fun!

In the event that you require an alternative, you can use standard cream cheese instead of reduced-fat cream cheese. As an alternative to cheddar cheese, you could use mozzarella or any other type of shredded cheese that you choose.

Rather than using a yellow onion, you can use either a sweet onion or a white onion. When it comes to storage, it is recommended that the original baking dish be covered completely with aluminium foil and placed in the refrigerator for a period of up to four days.

Freezing: I have not attempted to freeze this healthy buffalo chicken dip, and I would not advocate doing so. It will freeze solidly, and the consistency will shift as a result. The easiest way to reheat leftover dip is to do it in the oven, since this will ensure the finest possible flavour. After placing the original baking dish in the oven, bake it at 350 degrees Fahrenheit for five to ten minutes, or until it is warm.

If time is of the essence, you can reheat it in the microwave by covering a bowl that is safe for use in the microwave with a damp paper towel and heating it for thirty to ninety seconds until it reaches the desired temperature.
