  • To make black bean salad, you need black beans (also called frijoles negros in Spanish or rajma in India), veggies, fruit, seasonings, and spices. There are eight different kinds of veggies in this delicious salad: tomatoes, onions, corn, avocados, green onions, jalapenos, and red and orange bell peppers.

  • 3cans 15.5 oz eachblack beansrinsed and drained
  • 115.5 oz cansweet cornrinsed and drained
  • 1red oniondiced
  • 3clovesgarlicminced
  • 1orange bell pepperchopped
  • 1red bell pepperchopped
  • 2cupscherry tomatoesquartered
  • 2avocadoschopped
  • 1/3cupfresh cilantrofinely chopped
  • 1/4cupgreen onionschopped
  • 1jalapeñofinely chopped
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/4cupolive oil
  • 2tablespoonsred wine vinegar
  • 1/2teaspoonchili powder
  • 1/2teaspoonground cumin
  • 1/2teaspoonsaltto taste
  • Lime and sliced avocadocrushed corn chips

Instructions

  • After placing all of the ingredients in a large serving bowl, give it a good toss to incorporate them. Taste, then make any necessary adjustments for seasoning.
