Apple cider cookies Recipe Learn like a Pro 

Apple cider cookies taste like doughnuts. Soft and chewy cider-filled sugar cookies with apple cider butter, cinnamon sugar, and apple cider glaze.  

– 2 cups apple cider – 20 tablespoons unsalted butter – 2½ cups all purpose flour – 2 teaspoons apple pie spice  – 1 teaspoon cornstarch – 1 teaspoon baking powder – ¼ teaspoon baking soda – ½ teaspoon salt – 1¼ cup light brown sugar – ¼ cup granulated sugar – 1 large egg – 1 large egg yolk  – 1 teaspoon vanilla extract – 4 tablespoons unsalted butter, melted

Ingredient

Fill a small sauce pan with apple cider. Slowly boil or simmer apple cider over medium-high heat. Keep cooking cider until it reaches ¼ cup.

Remove from heat, pour into a small bowl or measuring cup, and cool to room temperature. In a sauce pan or pot, melt butter on low heat until foaming.

The butter will smell nutty and aromatic. The butter should have golden, lightly browned bits at the bottom once the foam subsides.

Mix flour, baking powder, baking soda, cornflour, crushed spices, and salt in another basin. Mix the cooled browned butter, light brown, and granulated sugars in a large bowl.

Add the egg, egg yolk, apple cider, and vanilla essence and mix well. Mix dry ingredients with wet until just mixed. I recommend doing this with ½ of the dry ingredients.

Using a medium cookie scoop, scoop cider cookie dough and place balls 3 inches apart on the lined baking sheet.

Bake cookies at 375 F for 9–11 minutes until edges are set and centres are slightly expanded. Cool chewy apple cider cookies on the baking sheet for 5 minutes.

Save until you brush it on apple cinnamon sugar biscuits. Whisk granulated sugar and ground cinnamon in another basin until completely blended.

Gather bowls close together to make cookie assembly easier. Brush one cookie with apple cider butter on top and sides to assemble.

Cover the bottom of the cookie with cinnamon sugar and flip it over so the butter side is facing up. Place the biscuit on the cooling rack.
