Caramel Apple Crisp Cheesecake Bars

Caramel Apple Crisp Cheesecake Bars – crunchy oat crust and topping, creamy cheesecake filling, juicy apple – cinnamon filling, all drizzled with caramel on top, make a perfect fall dessert. What makes it unusual is that both the crust and the topping are the same. 


– 1 cup graham cracker crumb – 1/4 cup unsalted butter, melted – 1 (8 oz) package cream cheese, softened – 1/4 cup granulated sugar – 1 large egg – 1 teaspoon vanilla extract – 1 cup diced apple – 1/4 cup caramel sauce – 1/2 cup old-fashioned oat – 1/4 cup all-purpose flour – 1/4 cup brown sugar – 1/2 teaspoon ground cinnamon – 1/4 cup unsalted butter, chilled and diced

Step 1

Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

Step 2

In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the prepared pan.

Step 3

In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread over the crust.

Step 4

 Arrange diced apples over the cream cheese layer, then drizzle with caramel sauce.

Step 5

 In a separate bowl, combine oats, flour, brown sugar, cinnamon, and chilled butter until crumbly. Sprinkle over the caramel layer.

Step 6

Bake for 25-30 minutes or until golden brown. Let cool completely before cutting into bars. Enjoy your delicious caramel apple crisp cheesecake bars!
