Chicken Fajita Tacos Recipe

These one-pan chicken fajita tacos are easy, flavorful, protein-packed, and healthful. They make a great 25-minute midweek dinner with real Mexican tastes!  

Chicken Tacos: – 3 medium chicken breasts, skinless and bonele – 1 tbsp olive oil – 1 large yellow onion, thinly sliced – 3 large bell peppers, red, yellow, green, thinly sliced – 1 large lime, or more – ¼ cup fresh cilantro, roughly chopped – 8 – 10 tortillas, corn, almond flour, chickpea flour, flour, or whole wheat – Optional toppings: salsa, pico de gallo, avocado, guacamole, sour cream, cheese Fajita Seasoning: – 2 tsp chili powder – 2 tsp ground cumin – 1 tsp garlic powder – ½ tsp paprika – ½ tsp salt – ½ tsp pepper


To make the fajita seasoning, combine the ground cumin, paprika, garlic powder, chilli powder, and salt and pepper in a small bowl. Put aside.

Season the chicken breasts by patting them dry with paper towels. Spread half the fajita seasoning on both chicken sides using your fingertips. Keep the seasoning for later.

To sear the chicken, place a large sauté pan over medium heat with olive oil. When the chicken breasts are cooked through, add the seasoned ones and fry them for 7 to 8 minutes on each side.

Take them out of the pan and give them five minutes to rest on a plate. Cook Onions and Peppers: Add sliced onions and bell peppers to the same pan.

Over them, distribute the leftover fajita seasoning. To avoid burning, sauté for 4 to 5 minutes, or until softened, turning constantly.

After the chicken is cooked, sauté the bell peppers and onion in the same cast iron skillet. Slice Chicken: Cut the cooked chicken breasts into thin slices after they have rested.

Mix the ingredients together: Return the cut chicken, onions, and bell peppers to the pan. Add chopped cilantro to the mixture and squeeze in some lime juice. Mix everything together.

Reheat tortillas to serve. Spread chicken and vegetables on each tortilla. Cheese, sour cream, avocado, guacamole, salsa, and pico de gallo can be added immediately.
