Chocolate Chip Mini Cheesecake

Here is the recipe for my favorite Chocolate Chip Mini Cheesecake. Graham cracker layer, chocolate chips cheesecake, chocolate ganache and whipping cream on the top make these Chocolate Chip Mini Cheesecake just perfect.


1. 1 cup graham cracker crumb 2. 2 tablespoons granulated sugar 3. 3 tablespoons unsalted butter, melted 4. 8 oz cream cheese, softened 5. 1/4 cup granulated sugar 6. 1 large egg 7. 1 teaspoon vanilla extract 8. 1/2 cup mini chocolate chip

Step 1

Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.

Step 2

In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture into the bottom of each muffin cup.

Step 3

In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth.

Step 4

Fold in mini chocolate chips into the cream cheese mixture.

Step 5

Spoon the cream cheese mixture evenly over the crusts in the muffin tin.

Step 6

Bake for 15-18 minutes or until set. Let cool, then refrigerate for at least 2 hours before serving.
