Cinnamon Sugar Pumpkin Muffins

Cinnamon Sugar Pumpkin Muffins – these soft, juicy, moist pumpkin muffins, that are covered with cinnamon and light brown sugar, make a perfect fall breakfast. This is a quick and easy recipe for all pumpkin fans.  

INGREDIENTS

– 1 3/4 cups all-purpose flour – 1 cup granulated sugar – 1 teaspoon baking soda – 1/2 teaspoon salt – 1 tablespoon ground cinnamon – 1/2 teaspoon ground nutmeg – 1/2 teaspoon ground clove – 2 large egg – 1 cup pumpkin puree – 1/2 cup vegetable oil – 1/3 cup milk – 1 teaspoon vanilla extract

Step 1

Preheat oven to 375°F (190°C). Line muffin tin with paper liners.

Step 2

In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.

Step 3

In another bowl, beat eggs, then add pumpkin, oil, milk, and vanilla extract. Mix well.

Step 4

Pour wet ingredients into dry ingredients, stirring until just combined.

Step 5

Divide batter evenly into muffin cups, filling each about 2/3 full.

Step 6

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Cool before serving. Enjoy your cinnamon sugar pumpkin muffins!
