Easy Homemade Blueberry Upside Down Cake is incredibly moist and flavorful dessert, but it could be great breakfast, too. This quick and easy cake with caramelized blueberries on top is a perfect dessert for fresh blueberry season.

INGREDIENTS

– 1/2 cup (1 stick) unsalted butter, melted – 1/2 cup brown sugar – 1 1/2 cups fresh blueberrie – 1 1/2 cups all-purpose flour – 1 teaspoon baking powder – 1/4 teaspoon salt – 1/2 cup granulated sugar – 2 large egg – 1 teaspoon vanilla extract – 1/2 cup milk

Step 1

Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.

Step 2

In the pan, spread melted butter and sprinkle brown sugar evenly.

Step 3

Arrange blueberries over the sugar-butter mixture in a single layer.

Step 4

In a bowl, whisk flour, baking powder, and salt. In another bowl, beat granulated sugar, eggs, and vanilla until fluffy.

Step 5

Gradually add flour mixture into the egg mixture, alternating with milk, until combined.

Step 6

Pour batter over blueberries and spread evenly. Bake for 40-45 minutes, until a toothpick inserted in the center comes out clean. Cool for 10 minutes, then invert onto a serving plate. Enjoy!
