Fluffy Cream Cheese Pancakes

These Fluffy Cream Cheese Pancakes make a perfect choice for breakfast or weekend brunch.  This is one of those recipes that you will save, for sure.  A perfect breakfast for a perfect start of the day – sounds good… These pancakes with cream cheese are incredibly light, soft and fluffy.

INGREDIENTS

– 1 cup all-purpose flour – 2 tablespoons sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1 cup buttermilk – 1/4 cup cream cheese, softened – 1 large egg – 2 tablespoons unsalted butter, melted – 1 teaspoon vanilla extract

Step 1

In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Step 2

In another bowl, blend buttermilk, cream cheese, egg, melted butter, and vanilla until smooth.

Step 3

Pour the wet mixture into the dry ingredients, stirring until just combined.

Step 4

Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.

Step 5

Pour about 1/4 cup of batter onto the skillet for each pancake.

Step 6

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
