Fresh Strawberry Bread

This soft and moist bread full of fresh and juicy, diced strawberries topped with strawberry glaze is a real breakfast treat, a snack or a dessert. Do you like strawberries?  I believe that most answers are positive. 

INGREDIENTS

– 1 cup fresh strawberries, diced – 2 cups all-purpose flour – 1 cup granulated sugar – 1 teaspoon baking soda – 1/2 teaspoon salt – 2 egg – 1/2 cup vegetable oil – 1/2 teaspoon vanilla extract

Step 1

Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

Step 2

In a large bowl, mix together flour, sugar, baking soda, and salt.

Step 3

In another bowl, beat eggs, then add oil and vanilla. Stir in diced strawberries.

Step 4

Combine wet and dry ingredients until just moistened.

Step 5

Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

 Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Enjoy!
