Healthy Blueberry Oatmeal Cookies

– 1 cup rolled oat – 1/2 cup whole wheat flour – 1/2 teaspoon baking powder – 1/2 teaspoon cinnamon – 1/4 teaspoon salt – 1/4 cup honey or maple syrup – 1/4 cup coconut oil, melted – 1 egg – 1 teaspoon vanilla extract – 1/2 cup fresh blueberrie

Step 1

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.

Step 3

In a separate bowl, whisk together honey/maple syrup, melted coconut oil, egg, and vanilla.

Step 4

Combine wet and dry ingredients, then gently fold in blueberries.
