Holiday Maraschino Cherry Shortbread Cookies

I am super excited and I can‘t wait to spend the holidays with my family.  We have already started preparing and, as you know, I especially enjoy making Christmas cookies.

INGREDIENTS

– 1 cup (2 sticks) unsalted butter, softened – 1/2 cup powdered sugar – 1/4 teaspoon almond extract – 2 cups all-purpose flour – 1/4 teaspoon salt – 1/2 cup chopped maraschino cherries, drained and patted dry

Step 1

Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.

Step 2

In a large bowl, cream together butter and powdered sugar until light and fluffy.

Step 3

Mix in almond extract. Gradually add flour and salt until dough forms.

Step 4

Gently fold in chopped cherries until evenly distributed.

Step 5

Roll dough into 1-inch balls and place on prepared baking sheets.

Step 6

Flatten each ball slightly with a fork. Bake for 12-15 minutes or until edges are lightly golden. Cool before serving. Enjoy your delightful holiday shortbread cookies!
