No Bake Vegan Peanut Butter Oatmeal Cookies

I have a special recipe for all of you who love vegan food – No Bake Vegan Peanut Butter Oatmeal Cookies.  These are delicious healthy cookies made of gluten free oat and peanut butter, enriched with coconut oil and coconut milk.


1. 1 cup creamy peanut butter 2. 1/2 cup maple syrup or agave nectar 3. 1/4 cup coconut oil 4. 2 cups rolled oats (gluten-free if needed) 5. 1/4 cup unsweetened almond milk 6. 1 teaspoon vanilla extract 7. Pinch of salt (optional)

Step 1

In a saucepan, melt peanut butter, maple syrup, and coconut oil over low heat until smooth.

Step 2

Remove from heat and stir in oats, almond milk, vanilla extract, and salt (if using).

Step 3

Drop spoonfuls of the mixture onto a parchment-lined baking sheet.

Step 4

Let the cookies set in the refrigerator for at least 30 minutes.

Step 5

Once set, enjoy your delicious no-bake vegan peanut butter oatmeal cookies!

Step 6

Store any leftovers in an airtight container in the refrigerator for up to a week.
