Pumpkin Pancakes

Pumpkin Pancakes is a recipe for our favorite soft and fluffy pumpkin pancakes, that combined with maple syrup and butter are our favorite fall breakfast.  They are so quick and easy to prepare and their taste is amazing.


– 1 cup all-purpose flour – 2 tablespoons brown sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1/4 teaspoon salt – 3/4 cup milk – 1/2 cup pumpkin puree – 1 large egg – 2 tablespoons melted butter – 1 teaspoon vanilla extract

Step 1

In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 2

In another bowl, mix milk, pumpkin puree, egg, melted butter, and vanilla extract until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

Step 4

Heat a lightly greased skillet or griddle over medium heat.

Step 5

Pour about 1/4 cup of batter onto the skillet for each pancake.

Step 6

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides. Serve warm with your favorite toppings.
