Snickers Cupcakes Recipe Learn like a Chef 

They contain peanut butter, salted peanuts, caramel, and chocolate buttercream. These delicious peanut butter cupcakes with salted peanut caramel and chocolate buttercream are the entire Snickers experience.

– 35 g salted peanut – 45 g granulated sugar – 45 g glucose syrup – 125 g heavy cream – 25 g butter – ¼ tsp vanilla paste – Pinch of salt – 200 g all-purpose – 1/4 tsp baking powder – 1/4 tsp baking soda – 1/4 tsp salt – 50 g butter – 20 g smooth peanut butter – 210 g granulated sugar – 3 egg – 150 g sour cream 18%  – 2 tbsp vegetable oil  – 1 1/2 tsp vanilla extract


Over low/medium heat, steadily melt granulated sugar and glucose syrup in a small saucepan until golden brown. 


Add heated heavy cream when sugar turns golden brown. It bubbles strongly, so watch your fingers. Keep stirring until it gathers.


Add butter after turning off the heat. Mix it until the butter melts into the caramel. Mix in the chopped peanuts, salt, and vanilla paste.


Allow it to cool in a basin on the kitchen counter while baking cupcakes. It takes 1 hour 30 minutes to reach room temperature.


Preheat the oven to 160ºC/ 320ºF and prepare a muffin tray with 12 liners. Set aside all-purpose flour, baking powder, baking soda, and salt after sifting.


Mix butter, smooth peanut butter, and sugar in a bowl using the paddle attachment on high speed for 3 minutes. 


Slowly add eggs to the mixture and mix until incorporated. After scraping the bowl, add the flour mixture and mix on low speed until barely incorporated. 


Finally, whisk the sour cream, vegetable oil, and vanilla extract until just blended, not overmixing the cake batter. 


To mix all ingredients, gently fold the batter with a rubber spatula. Divide the cake batter into 12 cupcake liners and bake for 23-25 minutes or until a cake tester comes out clean.


Cool the cakes on a rack. Remove the cupcakes from the tin gently after 5 minutes and let them cool completely.
